Wedding Cast

The Gastrocast has been postponed this week due to extreme fatigue brought about by craming a two weeks of work into 4 days.  While I sort myself out, here is Part A of the Wedding Cast. I chose to keep this Event-cast long, but break it into 3 parts. I have distilled almost 6 hours of audio into the highlights of what it's like behind the scenes at a swish wedding. We managed to carry the day, even thought there were only 7 of us, plus my 12 year old daughter. 4 of the people I had never worked with before. Congratulations has to go to the great efforts of the crew, both to work with me, but also to handle my severe exhaustion and breakneck pace. Special mention must go to my Long Suffering Wife, and dear friend Debbie, without whom this even would have ended in my commiting hari-kari.

There wasn't much time or mental power left on the day to focus on podcasting, but please listen to, and enjoy all three parts.

Done

The wedding is over. Peace and quiet at last. My second chef Deb and I together worked over 100 hours in 4 days. The party went off with only minor clitches. We were down to the wire on prep--having to roll the Spring Rolls, make the Scallion and Cream Cheese Fried Dumplings, and make Satay Skewers took a ton of time when we were doing it for 125.  Cooking everything in the agressive time frame during the event was also stressful.

I made an attempt to record audio for a podcast, but i haven't had a chance to check it out yet. I never had the time I wanted to do a proper job. My mind was moving a mile a minute over a huge amount of details which had to be exact and right, that I could never focus on the podcasting end of things. I hopefully caught some good sound during the wedding, but I will have to do some heavy editing because people didn't know they were being recorded, and I shot my mouth off quite a bit from frustration, exhaustion and beer. I think I caught the coffee crisis and Deb and my joking around though.  I've got to catch up on rest, finish cleaning up and storing equipment and pay bills, but I think I can pull a Gastrocast off this week as well. I've got to think of a way to use up a ton of leftover mint, rice and a few other ingredients. I'm thinking more Thai or Cambodian food. . . . Time to catch up on the blog scene, reading, and mail.

Recipe

Apricot Creams (adapted from Country Cooking--Sara Paston-Williams)

1 lb fresh, ripe Apricots
Juice of one or two oranges--depends on size
Rind of 1 Lemon
2oz Sugar
2 Cups, light Whipping Cream
3 Large eggs
1 Egg yolk
1 tbsp sugar
1/2 tsp Vanilla Extract

Meringue: 4 Egg Whites, 8oz (1 cup) Sugar

Stone the Apricots and poach lightly in the juice of one or two oranges with thet 2oz sugar. Drain off the liquid, pick out the lemon rind and puree adding back enough juice to make a smooth paste. Add some Cointreau now, if you like. 
Bring the cream to a boil. Meanwhile whisk eggs, and yolk with the vanilla and 1tbl sugar. Slowly pour in the hot cream, whisking all the time. Pour this mixture into 6 Ramekins or other oven proof dish. Place this in a bain marie and bake in a 325 degree F (170C) preheated oven for 20 or so minutes. Until center is just set. Let cool in the water bath.
When cool, spoon the apricot puree over the top and pipe with meringue. To make the meringue, add sugar and egg whites to mixer and mix on high speed until the whites are stiff peaked. Bake again at 400 degree F for 10 to 15 minutes or until the merigue is nicely browned.

Boasting just a bit

Please feed my ego (I'm much easier to get along with) and Vote Now, and Daily, for this show. Tell the world you like to hear a Chef ramble on and on and on and then hear a bit of frantic cooking, while wishing you were near your computer to see the photos. Help Send a message to my long suffering wife (sorry, I have to phrase any reference to her this way per Podcasting in Relationship: Article 5) that my hours at the computer are not totally needless. Send me on that endorphin rush that only blatant fan adulation can bring. Get the message across to the many dorks out there who tried to get me not to do a show. . . .
